Kappa Rotti Dosa

Kappa Rotti Dosa is one of the exclusive cuisines in Mangalore/Udupi area. The dosa is made on hanchina kallu or stone tava. It is a unique breakfast dish that is soft and spongy. This is a traditional dosa and has been prepared for years together. Do check out the recipe below.

Ingredients:

1 cup dosa rice

3/4 cup coconut

3 cups of water/ as required

salt as per taste

Method of preparation:

1. Soak 1 cup dosa rice overnight or for a minimum of 5 hours.

2. Next morning, grind the dosa rice with 3/4 cup of coconut. You can use 1/2 cup coconut to avoid too soft dosa. Add water in limited quantity, the consistency should be not to watery, it should be more of thicker consistency.

3. Add salt as per preference.

4. Pour the dosa batter on the tava, do not spread the dosa batter. Close it with a lid and simmer for a 2 minutes. Keep the flame in medium heat.

5. Remove the dosa from the tava after flipping to the other side, both the sides should be cooked well.
